Shrimp zarandeado, an iconic dish of Mexican cuisine, especially in Sinaloa, have a rich history and origin that dates back to pre-Hispanic times.
The perfect recipe for zarandeado shrimp, this is an iconic dish from Sinaloa Mexico cuisine, famous for their intense flavor and juicy texture. They are traditionally prepared over charcoal, using a special grill called "zaranda", hence its name. Get ready to prepare delicious Sinaloa-style zarandeado shrimp:
Ingredients:
· 1 kg of medium or large fresh shrimp, with shell and head preferably
· 1/2 cup of mayonnaise
· 1 tablespoon of mustard
· 4 tablespoons of Huichol style sauce or hot sauce of your choice
· Juice of 1/2 lemon
· 1 tablespoon garlic powder
· 1 teaspoon onion powder
· 1/2 teaspoon table salt
· Vegetable oil for grilling
Authentic Mexican Zarandeado Shrimp Marinade: Spicy and Sweet
Preparation:
1. Marinate the shrimp: In a large container, mix the mayonnaise, mustard, Huichol sauce, lemon juice, garlic powder, onion powder and salt. Add the shrimp and stir well so that they are completely covered with the marinade. Cover the container and refrigerate for at least 30 minutes, or better yet, overnight.
2. Prepare the grill: Preheat your grill to medium-high heat. If you use a charcoal grill, make sure the coals are well lit and evenly glowing.
3. Grill the shrimp: Lightly grease the grill with vegetable oil. Place the marinated shrimp on the grill, leaving space between each so they cook evenly. Cook for 2-3 minutes per side, or until shrimp are pink and opaque, with light grill marks.
4. Serve: Serve the zarandeado shrimp immediately, accompanied by warm tortillas, refried beans, white rice, pico de gallo, guacamole and your favorite souce.

Additional Tips:
· You can add other spices to the marinade, such as cumin, paprika or chili powder, to give it a more personal touch to your taste. · If you don't have a grill, you can cook the shredded shrimp in a skillet over medium-high heat. Add a little oil to the pan and cook the shrimp for 2-3 minutes per side, until pink and opaque.
· Zarandeado shrimp are also delicious served as tacos. Simply place a couple of shrimp on a warm tortilla and add your favorite taco toppings.

Variations:
· Garlic and Parsley Shaken Shrimp : Add 1 tablespoon minced garlic and 1/4 cup chopped fresh parsley to the marinade for a more herbal flavor.
· Shrimp zarandeados with guajillo chile: Toast and devein 2 guajillo chiles, soak them in hot water until they are soft, blend them with a little water and add the sauce to the marinade.
· Shrimp shaken with beer: Replace half of the lemon juice with light beer in the marinade for a more refreshing touch.
Good quality charcoal will burn evenly and provide consistent heat. The coals are ready when they are covered in a grayish coating and do not produce flames. Do not place the shrimp directly on the coals. This can cause them to burn on the outside and be raw on the inside. Instead, place the shrimp on a rack a few inches from the coals.
