Ingredients: (Serves 4)

a) ½ kg of dried shrimp
b) 1 grated carrot (as fresh as possible)
c) ½ finely chopped red onion (or white)
d) 1 seedless cucumber, chopped into small cubes
e) Juice of 4 lemons (or to taste, the important thing is that the shrimp is coated)
f) Chopped fresh cilantro to taste
g) Chopped serrano chili (optional, to taste)
h) Salt to taste, (Be careful since dried shrimp is salty)

Instructions:

1- Peel the dried shrimp Remove the shell and the head if it has one, leaving the body of the shrimp free of scales.
2- Hydrate the dried shrimp: Place the dried shrimp in a container with water for about 15 minutes. Drain well and let it dry completely.
3- Blend the shrimp: Place the hydrated shrimp portion in the blender and blend until obtaining finely chopped portions.
4-Mix the ingredients: In a large bowl, combine the previously hydrated and shredded shrimp, the grated carrot, the red or white onion, the cucumber, the lemon juice, the cilantro and the serrano chili (if desired).
5-Season: Adjust the flavor with salt, or more lemon to taste.
6-Refrigerate: Cover the bowl and refrigerate for at least 30 minutes before serving so that the flavors blend well.


Important Tips:
Dried Shrimp: You can find dried shrimp in the seafood section of your supermarket, fishmongers, or markets. Make sure it is well cleaned before using it.
Spicy: If you like spicy food, you can add more serrano chile or a little piquín chile.
